Newsletter Spring 04: Orange Bran Muffins (Recipe)
Mmm...a tasty treat: Orange Bran Muffins
Ingredients
1 medium orange unpeeled
3/4 cup low-fat milk
1/2 cup orange juice
1/4 cup reduced-calorie margarine
1 egg
1 tsp vanilla extract
2 cup whole-grain wheat flour
1/2 cup uncooked wheat bran
1/4 cup sugar substitute
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/8 tsp table salt
Instructions:

Cut unpeeled orange into 8 wedges. Place in food processor bowl and pulse until finely chopped or almost pureed. Add milk, orange juice, margarine, egg and vanilla; puree until combined.

In large bowl, combine flour, bran, sugar substitute, baking powder, baking soda, cinnamon and salt. Pour orange mixture over flour mixture and stir until just combined. Divide batter among 12 lined or greased muffin cups. Bake in 400 F oven for about 20 minutes or until golden and firm to the touch. Makes 12 muffins.
